Soft Plain White Loaf

My breadmaker produces 1 kg loaf but I have found that if I use ingredients for a 1 kg loaf, my bread pushes against the lid of the breadmaker. So I only need to use ingredients for 750g but still produces bread that rises over the pan when baked.

All the bread produced from this recipe have been consistently light and fluffy, similar to commercial bread. This recipe for white bread have never failed me and is good for toast or sandwiches.

Ingredients (for 750 g loaf)
310 ml warm water
1½ tsp salt
1½ Tbsp+1 tsp sugar
1 Tbsp lechithin
1 Tbsp+1 tsp milk powder
2¼ tsp surebake yeast (my surebake yeast have bread improver in it)
450gm bread flour


Method
1. Place ingredients into the bread pan according to your breadmaker instructions.
2. Setting : White bread
3. Bread dough will rise to within 1" from top of pan before the baking process begins.
4. Sliced when cooled.

Notes :
1. As temperature here is quite cool, I use warm water to help in the rising process.
2. I use lecithin granules as I find it produces a better loaf.
3. If you cannot find lecithin, use 1 Tbsp oil and reduce water to 295ml.
4. Surebake yeast have bread improver in it. For normal yeast use 1½ tsp+1 tsp bread improver.
5. My loaf usually measures 7" x 5½" x 6"H.

  2. Thanks for dropping by Lily. My breadmaker is Breville Bakers Oven. I highly recommend this breadmaker as it is not expensive and is flexible enough as you get better with breadmaking to have some control over the machine.
    Do not be disappointed if the first few loaves turn out dense - mine did but I persevered and now are consistently producing soft and light bread. Would love to hear feedback from any recipes you try.

    I am retracting my recommendation for the Breville Breadmaker BB280.

    They have changed certain features, most probably to cut cost and I have found their newest model BB280/A (label underneath) is not as durable.

  8. yee, I get mine at the bin section either at Pak n Save or at Bin Inn which is cheaper. The prepacked ones at the health section is more expensive.

  9. Thank u so much. I have bought the Lechithin.I just bought a Brevile BB280 breadmaker same like yours i think, do you follow the order stated in the instruction booklet or should the order be modified? Thanks again./yee

  10. yee, follow the instructions as per booklet which is water first.

    If your first loaf comes out dense, please do not despair. Before you eat your first loaf, do a quick measure of its height so you will know whether it has risen to the same height as mine.

  11. Hello, i tried to bake the white loaf today and it turned out soft but dense. The yeast taste was pretty strong and the bread was actually yellowish, not white : ) I guess i put too much yeast. I will try again thanks.// yee

    To try and pinpoint your problem, I have a couple of question :

    1. did you follow this recipe
    2. what brand high grade flour did you use
    3. what was the height of the baked bread
    4. what type yeast and how many tsp used
    5. did you use warm water

  13. Hi Sinner, i did follow the recipe exactly. I use bread flour bought from Chinese grocery shop made in taiwan (high protein flour) The bread measurement were about 15cmx5.5cmx6.5cm. I used the same surebake yeast that you mentioned. and used warm water too. I follow the orders as mentioned in Breville booklet putting in the ingredients. The crust was really hard too, i actually left it cool down in the breadmaker for about 35 min before taking it out, wonder if it actually makes the different. Thanks.

    I prefer to buy my flour from the supermarket as they have a higher turnover so can guarantee that they are fresh. Old flour can cause problems with rising etc. Since the price of flour is now so expensive, I have switched to using HomeBrand from Countdown which has a protein of 11%. Can you have a look at the pack and see whether there is a use by date and also the protein level ?

    Your bread measurement is in cm. Doesn't sound right. Looks like you got a very small loaf. How high was the bread ? Just before it started baking was the dough within 1" to the top of pan?

    Because we are using surebake, you can't really reduce the yeast by much. Hope you measured it as level tsp and not heaped.

    Don't leave the bread in the breadmaker as the bread will sweat and get damp. Better to take it out immediately and leave to cool on a rack. I usually leave it until the next morning and then cut up for breakfast and freeze the leftover. Still nice and fresh.

    The bread shouldn't be yellowish - could be the flour.

    Sorry about the questions but hopefully we will get you your fluffy bread in the end ;)

  17. Just wondering...how do you manage to slice the bread into so thin slices? I used a serated knife but my bread slices are big and uneven, like door wedges. :(

    We have something similar to this. The added bonus is that the bread that is cut from this cutter comes out very smooth too. Best tool ever especially if you make your own bread. Even though it looks bulky, it is quite light weight.

    It used to be such a chore cutting bread with a manual or electric knife and we too used to get doorstops and uneven slices.

    Problem solved. One less complain from this household :)

    Yes, bought my cutter here in Auckland. I got it from Countdown for $60 but they don't sell it anymore.

    I have seen something similar at Kmart for $100. My blade is serrated (like the one pictured) wherelse the one at Kmart is a smooth round one.

    I have no luck looking for the bread slicer in Auckland, Rotorua and today Im looking for it in Taupo with no success. Went to Countdown, Pak n Save, Farmers and Harvey Norman.
    Will be going to Hamilton before heading back to Auckland. Hopefully I can find it. I did not see any K Marts so far.

  24. Vivien, there is 4 K Mart in Auckland. The one where I saw had the bread or meat slicer (I think that is what they call it) is in Henderson. Don't know whether it is still in stock. The other 3 KMart are in Papatoetoe, St Luke and Botany. Can you get hold of a telephone directory? Might be easier to give them a call to find out if they have stock.

  25. Thanks Sinner.Will look for the Kmarts when back in Auckland. The weather is so far so good but the sun is so bright and very "glaring".
    The Chinese restaurants/takeaways so far have not very good. You can cook better than them cos I have tried your recipes and always thumbs up from my boys.

    Chinese food here cannot compare at all to Msia or Sg.
