Szechuan Chicken in Hot & Spicy Sauce

A delicious, spicy and aromatic szechuan dish. The hot and spicy sauce can be prepared ahead of time and kept in the fridge or freezer. Add some chilli oil to the sauce if you like it extra hot and spicy.

Szechuan Chicken
Ingredients
800 gm chicken pieces or 7 drumsticks
1 tsp ginger, chopped
1 clove garlic, chopped
1 Tbsp cooking oil
spring onion, finely sliced

Seasoning
4-5 Tbsp szechuan hot and spicy sauce *1
½ Tbsp oyster sauce
1 Tbsp shao hsing cooking wine
100 ml water

Method
1. Heat up 1 Tbsp oil and stir fry ginger and garlic until fragrant. Add chicken and stir-fry until golden brown.

2. Stir in seasoning, cover and simmer until chicken is cooked and sauce has thicken (about 10-15 minutes).

3. Serve sprinkled with spring onions.

Szechuan Hot and Spicy Sauce *1


Szechuan Hot n Spicy Sauce
Yield : 4-5 Tablespoon

Ingredients
1 onion, chopped
5 clove garlic, chopped
1½ Tbsp light soya sauce
1 tsp black soya sauce
1 Tbsp Chinkiang black vinegar
1 tsp sugar
¼ tsp salt
1½ tsp Baba chilli powder
2 Tbsp chopped spring onion or chives
1 Tbsp cooking oil
1 Tbsp white sesame seeds, toast briefly in a hot dry pan

Method
1. Heat oil and saute chopped onions and garlic until fragrant.
2. Add the remaining ingredients except sesame seeds and bring to the boil.
3. Remove from the heat and mix in the sesame seeds.
4. Use as required or freeze.

Note : Add more chilli if you like it extra spicy.

Hi sinner, tried this recipe today. Replaced chicken with fish as I have frozen fish meat in the fridge. This recipe is definitely a keeper!
