The thai basil and capsicum in this dish definitely added the 'oomp' to the chicken. The sauce is rich and full of flavour.
Ingredients :
1 kg chicken (cleaned, washed, dried, cut into pieces)
Seasoned with 1 tbs soy, ¼ tsp salt, ¼ tsp pepper.
Blend or pound fine:
3 red chillies
3 cm piece ginger
1 stalk lemon grass
1 large onion
2 clove garlic
1 Tbsp tamarind paste + 1 Tbsp water
2 tsp sugar
50g thai basil leaves
1 capsicum, cut into pieces
3 Tbsp oil
1 cup water or stock
Method :
Heat oil in wok.
Fry the pounded ingredients till fragrant.
Add tamarind, sugar.
Add in chicken pieces and fry 3 minutes till chicken coated.
Gently add water or stock and simmer till chicken is cooked.
Taste and adjust seasoning if necessary.
Add green pepper and basil leaves. Stir to combine. Dish out immediately.
Do not overcook or the lovely colour and the crunchiness of the capsicum and basil will be lost.
