This lemon chicken is refreshing with a lovely tangy flavour. The lemon sauce is lemony without being overly sweet.
Ingredients
6 pcs drumstick
Marinade
1 Tbsp chinese cooking wine
1½ Tbsp light soya sauce
1 egg yolk (optional)
Coating
100 gm cornflour
50 gm rice flour
Sauce mix
60ml fresh lemon juice
2-3 Tbsp grated rind of lemon
2 Tbsp sugar
100 ml chicken stock
1½ tsp potato starch mixed with 1 Tbsp water
Method
1. Marinate chicken for at least 4 hours.
2. Coat chicken with the flour combination. Set aside for 15 minutes.
3. Heat up wok with enough oil for deep frying.
4. Deep fry chicken until cooked and golden brown.
5. In a small pot, add in all the lemon sauce mix and boil gently.
6. Thicken with potato starch. If lemon sauce is too gooey, add a bit more water.
7. Pour sauce over chicken and serve immediately.
Tip
1. By resting the chicken after being coated with flour, the oil is less cloudy.

Both the chicken and the lemon sauce were bland.
I think have to add a little salt to the chicken to marinate. As for the sauce, I will suggest to reduce the amount of lemon juice slightly and add some honey to enhance the taste.
Cooking is all about experimenting. Recipes only act as a guide. Each persons taste bud is different and you obviously like your food with more salt and sugar.
The recipes in my blog are adapted to suit my family's palate and might not suit everyones taste.
I am sorry you felt this chicken too bland for you but from your suggestion you obviously know how to adjust the recipe to suit.

My son likes lemon chicken and I would love to try your recipe. Please explain which rice flour you are using. There are so many kinds of rice flour in the store. If possible, a picture of the packaging with Chinese words will be greatly appreciated. Thanks.
Wendy, I have added a link to a pic of the rice flour. You don't have to use any particular brand.
Every time I go to the shop they seem to stock different brands. I try and get the best possible quality rice flour.
How to tell...I just go by price and buy from a shop that has a lot of customer so their flour is not old !
