I love fried chicken wings but am not allowed to have any too often. Why....? Chicken wings are mostly all skin and if they are deep fried as well, there is a double dose of cholestrol. Just this once I am defying doctors orders.
This recipe is my all time favourite for fried chicken. The skin has that extra flaky coating that is really crispy and the meat juicy and moist.
Ingredients
Seasoning
6 chicken wings
¼ tsp salt
1 Tbsp oyster sauce
dash of black pepper
Coating
50gm cornflour
25gm rice flour
¼ tsp salt
dash of black pepper
¼ tsp garam masala (optional)
Method
1. Marinate the chicken wings with the seasoning and keep in the fridge overnight.
2. Put all the coating ingredients into a plastic bag. Drop each wing into the bag and give it a good shake to coat the wings.
3. Rest the wings for 5-10 minutes.
4. Drop the coated wings into the bag again for a second coating.
5. Heat up your deep fryer.
6. Deep fry the chicken wings until golden brown.
7. Serve immediately with a salad or chips.
Note : the ratio of corn flour to rice flour for the coating is 2:1
Tip :
1. I prefer to coat the meat using a plastic bag as it is less messy than trying to coat it on a plate.
2. If you like it extra spicy, add some chilli powder to the coating ingredients.

I can almost hear the crackling sound from the skin as you bite into the wing, this looks oh-so-good! Did I see a serving healthy salad to 'balance things out'? :p :p

The wings are indeed crispy and tasty right after frying. But is there anything else I can add in to make the wings stay crispy even after 1 hour ?

As with any food it is best eaten fresh. But you can always try putting it in the grill for a few minutes though it might dry the meat out a bit. Or you can put it back into the hot oil again for a quick 'freshen' up.

I had quite some leftover coating and used it on some squids. And it turned out to be as crispy as the chicken wings, another yummy yummy .... thanks again.

Coating on squid - that is an excellent idea.
We have used this coating on pork bits (little nuggets) with great success too especially if you have a party.. little nibbles for the guests.
Wonder whether it will be good on onion rings ?
