Cooking this sweet spicy and sticky chicken is really simple as it does not involve a lot of preparation. The ingredients are common items most of us have in the pantry. We love the intense flavour of this dish.
I usually precook a meat dish at least an hour earlier and let it sit in the pot to let the meat absorb the flavour. That way you end up with a more flavoursome and better tasting meal.

Ingredients:
1½kg chicken pieces
1 Tbsp oil
1 Tbsp minced fresh ginger
2 clove garlic, minced
3 spring onions or bunch of chives, thinly slices
Sauce Mix
3 Tbsp brown sugar
1 tsp sugar
3 Tbsp fish sauce
3 Tbsp rice vinegar
1 Tbsp soy sauce
3 Tbsp water
½ tsp freshly ground black pepper
½ tsp chilli powder or chilli paste
Method
1. Heat the oil in a large frying pan over med heat. Saute ginger and garlic for a few seconds then add the spring onions or chives.
2. Turn the heat up, add the chicken and stir fry for a few minutes until at least slightly brown.
3. Add the sauce mix and bring to a boil. Reduce the heat to low, cover and simmer, turning the chicken occasionally until cooked 20-30 mins. Add more water if you find the sauce evaporating too quickly. Taste and adjust seasoning to suit. (If you have time, leave the chicken to soak as long as you can in the gravy before proceeding to the next step)
4. Remove the chicken from the pan. Increase the heat to high and reduce the sauce by half or until it is slightly thickened. Add the chicken back to the pan.
5. Serve with rice.

Wanna ask do think i can use "normal sugar" instead of brown sugar
Also, whenever i try to cook "sticky gravy" my sauce doesn't thicken. After readying your post, i think i should not add too much water..

Yes you can use brown sugar but reduce the quantity as normal sugar is sweeter.
If you want the sauce to thicken quickly, leave the lid off when reducing. Don't add too much water at start as it is easier to add, harder to reduce.

I tried this recipe tonight, and although i did not have the ginger it was still delicious It was very simple to make and fulfilling. This is a definite must-make again ^_^
